  • 2 Wagyusteak
  • Salt and pepper
  • Clarified butter

Potato gratin:

  • 4 Potatoes
  • 100 ml Cream
  • 200 ml Milk
  • Salt and pepper

  1. Cut the potatoes into very thin slices and place in a buttered baking dish. Mix the cream with the milk, add salt, pepper and nutmeg and pour over the potatoes.

  3. Season the steak with salt and sear it on both sides for 2 minutes, then pepper. Wrap the meat in aluminum foil and let it rest for about 10 minutes. My meat was about 2 cm thick if it is thicker then sear it longer.
