How to use up yellow broccoli

If your broccoli has turned yellow, you can use it as usual. A broccoli soup, a vegetable pan or another broccoli recipe is recommended here. As an example, here is a recipe for a broccoli cream soup.

  • Weigh approximately 300 grams of yellow broccoli and cut into florets.
  • Put the vegetables in a saucepan with water and vegetable broth, then cook for about 10 minutes.
  • After cooking, set aside some broccoli florets (6-7 pieces) and puree the rest.
  • Now boil the pureed florets again together with processed cheese and cream (two tablespoons each).
  • Finally, season with salt, pepper, nutmeg and the broth and decorate with the remaining broccoli florets.
