How to neutralize a bitter taste

Food that tastes too bitter can have several reasons. However, the most common is that the food is burning or that the vegetables used are bitter.

  • Vegetables can taste bitter if the weather conditions were bad during ripening or if they were not harvested at the right time. In addition, the vegetables could be spoiled – in this case, you should not prepare them anymore.
  • If you notice before cooking that vegetables such as cabbage or asparagus taste bitter, it is advisable to cook the vegetables in water with a little sugar and butter.
  • If you notice a slightly bitter taste when cooking, try to neutralize it with sugar and butter as well. You can use honey or other sweeteners instead of sugar.
  • Danger! If you have a bitter-tasting zucchini, you shouldn’t take any chances and rather discard the vegetable. Bitter-tasting courgettes can be very poisonous. Cooking doesn’t help either.
  • For sauces, adding a raw potato and cooking for a while can help. It removes the bitter substances from the sauce.
  • If there is a strong bitter taste, the only thing that usually helps is to dilute the food. For example, if you burn something, discard half, remove burnt bits of veg or meat, and reseason the food.
