Recipe for a juicy quark stollen – ingredients
For a juicy quark stollen you need the following ingredients:
- 150 grams of raisins
- 5 tablespoons rum or orange juice
- 175g butter
- 150 grams of sugar
- a pinch of salt
- 1 packet of vanilla sugar
- 3 eggs
- 75 g lemon peel and 75 g orange peel
- 250 g cottage cheese (40%)
- 500 g flour type 405
- 1 packet of baking powder
- 80 g slivers of almonds
- powdered sugar
Preparation of the Quark Stollen
Even beginners can make Christmas cookies. The quark in the stollen makes it juicy.
- If you would like to bake a quark stollen, soak the raisins in five tablespoons of rum the evening before. If you don’t like alcohol, you can replace the rum with orange juice and use the rum aroma for taste.
- Put the butter, sugar, a pinch of salt, and vanilla sugar in a large bowl and mix everything together until fluffy. Use a food processor or hand mixer for this.
- Add the eggs, the chopped candied lemon and orange peel, and the quark, stirring constantly.
- Then add the flour with the baking powder and knead the dough vigorously by hand. When the dough is kneaded evenly, carefully knead in the soaked raisins and the slivers of almonds.
- Put the finished dough in a loaf pan and bake the quark stollen for about 50 minutes in an oven preheated to 190 degrees.
- Tip: Make sure that no raisins stick out on the top. These would turn bitter when baked.
- If you like, you can sprinkle the finished quark stollen with powdered sugar after it has cooled down.
