Ingredients for 10 servings:

  • 1 kg bacon cubes
  • 2 bay leaves
  • 5 juniper berries
  • 2 kg potatoes
  • salt and pepper
  • 1 kg sauerkraut
  • 1 onion(s)
  • 1 apple
  • 100 ml white wine
  • 1 bunch of parsley
  • 1 tsp thyme

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Heat the sauerkraut in a saucepan. Add the bay leaves, juniper berries, pepper, salt, thyme, and white wine and simmer briefly. Finely grate the apple and dice the onion. Heat a little oil in a pan and sauté the onion and apple until translucent. Brown the meat in a pan. Peel the potatoes and cook in salted water until tender, then drain and mash. Combine the sauerkraut with the potatoes, meat, and apple and onion mixture. Stir in the chopped parsley at the end.
