Ingredients for 3 servings:
- 320 g flour
- 2 large eggs
- 190 ml milk
- 1 tbsp oil
- 100 g leek (thinly sliced)
- 150 g bacon (cut into small cubes)
- 100 g cheese, shepherd’s cheese or feta (diced)
- 250 ml sour cream
- butter
- nutmeg
- salt and pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Whisk together the flour, eggs, milk, oil, and 1 teaspoon of salt, vigorously whisking to form a stiff dough. Bring plenty of salted water to a boil and rub the dough into the water using a dumpling strainer, stirring briefly with a wooden spoon to prevent lumps from forming. Cook for about 2 minutes, then strain and refresh with cold water. Heat a little butter and briefly fry the bacon cubes. Add the leek and fry briefly. Then add the spaetzle and pour the cream over the bacon. Heat, mix everything well, and season to taste. Finally, stir in the cheese pieces and serve immediately.
