Potato salad à la Mutti

Ingredients for 4 servings:

  • 750 g potatoes, waxy
  • 500 g meat salad
  • 250 g salad cream (Miracle Whip Balance)
  • 1 apple (Boskop)
  • 3 gherkins
  • 1 onion(s)
  • ½ bunch chives, optional
  • salt and pepper
  • pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 55 minutes

Super simple and always good with Vienna sausages or grilled food; our traditional Christmas Eve meal

Boil the potatoes, let them cool, peel them, and dice them. Toss the meat salad with Miracle Whip. Peel and dice the apple, and add it. Dice the cucumber and peel and dice the onion, then mix both together. Fold in the potato cubes. Season the salad with salt and pepper, and garnish with chives if desired. Let the salad sit for at least 2-3 hours.
