Spicy potato salad with yogurt-mayonnaise dressing

Ingredients for 4 servings:

  • 1 kg potato(s), waxy (e.g. Cilena)
  • 1 bay leaf, 1/2 tsp peppercorns
  • ½ bunch chives
  • 4 eggs, hard-boiled
  • 6 gherkins
  • 150 g natural yogurt
  • ½ jar mayonnaise
  • Cucumber juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes in their skins with salt, bay leaves, and peppercorns. Let them cool, peel, and then dice them. Finely dice the hard-boiled eggs and gherkins, finely chop the chives, and add everything to the diced potatoes. Make a dressing with yogurt, mayonnaise, and a generous splash of the gherkin juice. Season with salt and pepper, and gently toss with the salad. Let it marinate for a while. Season to taste before serving.
