Allgäu cheese spaetzle with onions

Ingredients for 2 servings:

  • 400 g flour
  • 5 eggs
  • ½ tsp salt
  • e.g. water, cold
  • 2 onions
  • some butter
  • 200 g cheese, grated
  • possibly chives
  • possibly salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

delicious spaetzle, easy and quick

Sift the flour into a bowl. Stir in the eggs, salt, and water with a wooden spoon. Stir the batter until it bubbles. You may need to add more cold water. Melt the butter in a pan. Peel the onions and slice them into rings. Then fry them in the butter until light brown. Bring a large pot of salted water to a boil. Press the spaetzle dough through a pasta press into the water (it’s a bit sticky!). Stir frequently with a wooden spoon. When the spaetzle rise to the surface, they’re done. Use a slotted spoon to transfer the first portion to a warmed bowl. Before placing it in the oven to keep warm, sprinkle some of the grated cheese over it. Repeat this process until all the batter is used up. Finally, sprinkle the onions and some chives over the batter. Add salt and pepper, if desired. A green salad always tastes good with this dish, but it can also be served as a side dish.
