Roast pork with leek

Ingredients for 4 servings:

  • 1.2 kg roast pork (loin), boneless
  • 2 garlic cloves, crushed
  • 2 tbsp oil
  • 1 ½ kg leeks
  • 200 ml broth
  • 1 lemon(s), the juice
  • Salt and pepper from the mill
  • possibly cornstarch

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Rub the meat all over with crushed garlic, salt, and pepper. Brown on all sides in hot oil and remove. Trim the leek and cut into approximately 10 cm long pieces. Sauté in the drippings and season with salt and pepper. Return the meat to the leek. Add the broth and lemon juice. Simmer in a covered pan over low heat for about 1 1/2 hours. Remove the fat from the braising liquid and thicken with cornstarch, if desired. Season to taste with pepper. This goes well with mashed potatoes and a salad of your choice.
