Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 large onions
  • 250 g diced ham
  • 750 ml broth, strong (e.g. vegetable or meat broth)
  • 250 ml whole milk
  • 150 g Vienna sausages
  • 2 tbsp spring onions, chopped
  • some salt and pepper
  • nutmeg if required

Boil the potatoes in their skins until soft and peel. Fry the ham and brown it slightly, then remove it from the pot or pan. Sauté two large onions in the fat, adding a little more oil or butter if desired. Pour the rich broth into a large pot. Add the potatoes, onions, and milk, bring to a boil briefly, and blend everything until smooth. Add the diced ham and the sliced ​​Vienna sausages. Season to taste and sprinkle with the chopped spring onions.
