Sour kidneys according to Koelkast's mother-in-law

Ingredients for 2 servings:

  • 500 g pork kidney(s), soaked several times
  • 2 onions
  • 125 ml broth
  • ½ lemon(s) (juice)
  • 1 pinch(s) of sugar or honey
  • 1 tsp cornstarch
  • 1 tbsp water
  • 100 ml cream
  • Butter, for frying
  • Parsley
  • salt and pepper

Working time approx. 30 minutes; Total time approx. 30 minutes

I had to get used to it, but they are really delicious

Remove all fat, veins, etc. from the kidneys and rinse them several times. Let them sit in the water for a while. Then shred the pure kidney meat, fry it in butter with the diced onions, and deglaze with the broth. Cook gently for about 10 minutes, then season with lemon juice, sugar/honey, pepper, and salt. Mix the Mondamin with water and stir into the sauce. Simmer for 10 minutes, add the cream and chopped parsley, and serve with mashed potatoes.
