Asparagus with ham and potatoes

Ingredients for 3 servings:

  • 1 ½ kg asparagus
  • Salt and pepper, 1 pinch of sugar
  • 100 g butter
  • 2 tbsp parsley, chopped
  • 750 small potatoes
  • 150 g bacon, cut into thin strips
  • 2 tbsp oil

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Peel the asparagus and trim the ends. Cook in salted water with sugar for 12-15 minutes. Melt the butter, add the herbs, and season with salt and pepper. Brush the potatoes thoroughly and cook with the skin on for 20 minutes. Drain and peel. Wrap each potato in a strip of bacon and secure it with wooden skewers. Heat oil in a pan and fry the potatoes until crispy on all sides. Serve with the asparagus and herb butter.
