Ingredients for 4 servings:
- 1 onion(s), diced
- 80 g dried meat
- 500 g green beans (runner beans), cut into 1 cm lengths
- 4 carrots, diced
- 5 potatoes, peeled and diced
- 2 Cabanossi , thinly sliced
- 1 tbsp flour
- 1 tbsp tomato paste
- ¾ liter vegetable broth, hot
- pepper
- possibly salt if needed
- n. B. Parsley, finely chopped
- 4 pieces of cake (plum cake, large pieces)
- oil

Saarland style: Löffelsche bean soup and Quätschekuche
Fry the dried meat and onions in hot oil for 3 minutes. Add the diced vegetables and potatoes and sauté for 5 minutes, stirring frequently to prevent sticking. Dust with flour, stir several times again, and then pour in the hot vegetable stock. Add the Cabanossi (Lyoner cheese is used in Saarland) and simmer for about 15-20 minutes, until the vegetables are soft. If desired, add 1 tablespoon of tomato paste to thicken the flavor. Season with pepper and parsley. Arrange on plates and serve hot. Serve with a large slice of plum cake made from yeast dough. The flavor of the cake and soup together is amazing.
