Hearty kale stew

Ingredients for 6 servings:

  • 1 ½ kg kale, cut and cleaned
  • 1 kg potatoes, waxy
  • 6 sausages (Mettenden)
  • 6 slices of smoked pork
  • 1 tbsp lard (greaves)
  • 2 tbsp broth, granulated
  • 2 ½ liters of water
  • 150 g diced ham
  • 1 bunch of soup vegetables
  • 1 large onion(s)
  • 1 tsp mustard, medium hot
  • Spice(s), as desired

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, clean and finely chop the soup vegetables. Peel and halve the onion. Also finely chop the potatoes after peeling them. Then, in a large pot, melt the lard over medium heat. Then add the soup vegetables, the diced ham, and the onion and fry for about 2 minutes. Now add the kale, the potatoes, and the mettenden sausages (lightly pierce the mettenden sausages) and pour in the water until everything is covered. Now add 2 slightly heaped tablespoons of granulated stock and let the stew simmer for about 1 hour. After about 40 minutes, place the slices of smoked pork on top and turn after 10 minutes. You can use whatever seasoning you like—even a bit of sugar is fine. Since we don’t usually like it that soupy, I always skim off some of the stock. It can also be used as a great base for other stews. PS: If you have a good pot that doesn’t burn, you can skip the crackling lard. It’s just to prevent sticking to the bottom.
