Ingredients for 4 servings:
- 1 kg potatoes, medium-sized
- 2 medium-sized red onions, halved and sliced
- 2 medium-sized red bell peppers, halved, pitted and cut into strips
- 14 pieces olives, black, pitted and halved
- 3 tsp, heaped cumin
- 2 tsp Pul Biber or chili flakes
- salt and pepper
- 3 tbsp olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes
Recipe from Anatolia, strongly spiced
Preheat the oven to 200 degrees Celsius. Peel and quarter the potatoes, and pre-boil them for 10 minutes. Heat a little olive oil and sauté the onions and bell peppers for 5 minutes. In an ovenproof dish, mix the potatoes, onions, bell peppers, and olives with the spices and olive oil. Place the dish in the oven and bake the vegetables for 35 minutes.
