Oven-baked vegetables

Ingredients for 2 servings:

  • 500 g potatoes, small, e.g., triplets
  • 2 carrots
  • 1 zucchini
  • 2 shallots
  • 2 tbsp olive oil
  • salt and pepper
  • 1 handful of parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

vegetarian and simple

Cut the small potatoes into approximately 1 cm pieces. Halve the carrots, shallots, and zucchini, quarter them if desired, and also cut them into small slices. Combine all ingredients in a baking dish and mix, then add the olive oil and mix again. Place the baking dish on the middle rack of the oven and bake the vegetables for about one hour at 200°C (top/bottom heat). Stir occasionally. Meanwhile, chop the parsley. The dish is ready when the potatoes are cooked through. Season to taste with salt and pepper and garnish with the parsley.
