Ingredients for 1 servings:
- 150 ml water, lukewarm
- ½ cube of yeast
- 1 pinch(s) of sugar
- 450 g flour
- 1 pinch of salt
- 2 tbsp yogurt
- 2 tbsp sunflower oil
- 500 g spinach, fresh
- 1 onion(s)
- salt and pepper
- nutmeg
- 300 g sheep’s cheese
- 4 eggs
- 1 egg yolk
- 1 tbsp milk
- Black cumin
Instructions
Working time approx. 40 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 45 minutes
In a bowl, dissolve the yeast and sugar in lukewarm water. Then add the flour, salt, yogurt, and sunflower oil and knead the dough by hand until soft and smooth. Cover and let rise in a warm place for at least 45 minutes. Meanwhile, wash the fresh spinach and remove the stalks. Finely chop the onion and sauté in the pan. Also finely chop the washed spinach, add it to the onions, and sauté. Season with salt, pepper, and nutmeg to taste. Let the spinach cool slightly. Cut the feta cheese into very small pieces and stir into the spinach. Fold 3 eggs into the mixture. Divide the dough into 4-6 equal portions and roll out into oblong-oval flatbreads. Place the spinach and feta cheese mixture in the center, fold in the edges, and twist the ends. Whisk an egg and brush it onto the visible spinach mixture. Finally, whisk one egg yolk with the milk, brush the edges with it, and sprinkle with black cumin. Bake in a preheated oven at 200°C (top/bottom heat) for at least 20 minutes.
