  • 300 g natural yogurt
  • 100 g crème fraîche
  • 250 g low-fat curd cheese
  • 2 cloves garlic
  • Salt

Grill the eggplants in the oven on a rack lined with parchment paper until the skin peels easily. Peel and finely chop the eggplants. Meanwhile, press the garlic and mix it with salt. Mix the natural yogurt, quark, and crème fraîche with the garlic. Arrange the eggplants on a plate and pour the yogurt mixture over them. Tip: In the summer, you can also grill the eggplants on a charcoal grill—this gives them a wonderful smoky flavor. If desired, you can also top them with seared meat.
