Red bulgur salad

Ingredients for 4 servings:

  • 250 g bulgur
  • 500 ml salted water, boiling
  • 1 red bell pepper(s)
  • 1 onion(s)
  • ½ cucumber(s)
  • 4 beefsteak tomatoes
  • 1 clove(s) garlic
  • 1 bunch of spring onions
  • chives
  • Parsley
  • 1 lemon(s)
  • 50 ml oil
  • 2 tbsp tomato paste

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Total time approx. 30 minutes

with tomato, cucumber, peppers and onion

Soak the bulgur wheat in salted water for 7 minutes. Follow the package instructions. Let cool. Finely chop the tomatoes, bell peppers, cucumber, onions, and garlic and mix with the bulgur wheat. Add herbs, such as parsley or chives, to taste. For the dressing, squeeze the lemon juice and mix it in a bowl with the tomato paste and oil. Finally, pour over the salad and mix.
