Bulgur salad

Ingredients for 4 servings:

  • 250 g bulgur (wheat groats)
  • 3 pointed peppers, red
  • 1 m.-large onion(s), red
  • ½ bunch of spring onions
  • 1 bunch parsley, flat
  • 4 tbsp oil, neutral (e.g. sunflower oil)
  • ½ tube(s) tomato paste
  • Salt

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Total time approx. 40 minutes

Kisir

Place the wheat groats in a large bowl and fill with hot water so that the groats are just covered. Be sure to drain off any excess water, otherwise the kisir will become soggy. If necessary, you can add a little more groats after letting it soak. Season generously with salt and let it soak for about 10 minutes. In the meantime, finely dice the bell pepper and onion, finely slice the spring onions, and chop the parsley. Stir in the oil and tomato paste. Season to taste and add more salt if desired. Mix in the remaining ingredients. Tastes delicious as a side dish or as a salad for a barbecue. You can also serve it in smaller portions in iceberg lettuce leaves with 1/8 of a lemon for a party. But it’s also delicious on its own.
