Ingredients for 6 servings:

  • 1 ½ cup(s) bulgur, fine (approx. 300 g)
  • 1 ½ cup(s) water, hot
  • 1 onion(s) or spring onion(s)
  • 3 tomatoes
  • 3 pointed peppers
  • ½ cucumber(s)
  • 1 bunch parsley, flat
  • 1 tbsp tomato paste
  • 1 tbsp paprika paste
  • 1 lemon(s), the juice
  • 6 tbsp oil
  • salt and pepper
  • Chili flakes (Pul Biber)
  • 1 head of lettuce of your choice (e.g. lettuce)

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Kisir from Turkey

In a bowl, mix the bulgur with hot water. Cover with a lid. Score the tomatoes, pour hot water over them, and peel them. Finely chop all the vegetables and add them to the swollen bulgur (it should no longer be warm, but still soft) along with all the other ingredients. Mix everything thoroughly (preferably by hand) and season to taste. Put the lid back on the bowl and let it sit for 1-2 hours. Serve with lettuce leaves.
