Ingredients for 4 servings:

  • 4 trout(s), ready to cook
  • 4 slices of ham (Serrano ham)
  • 150 g bacon, diced
  • 2 cloves garlic
  • 100 ml extra virgin olive oil
  • salt and pepper
  • some flour

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Trucha a la Navrra

Season the cooked trout inside and out with salt and pepper. Stuff each trout with a slice of Serrano ham and secure with a wooden skewer. Coat the trout in flour and pat dry. Fry the bacon in a little olive oil, add the garlic, and sauté. Remove the bacon and garlic, discarding any excess fat. Fry the trout in olive oil on both sides until golden brown, then add the bacon and garlic back in. To serve, pour the bacon and garlic mixture over the trout. Serve with fresh white bread. Variation: Wrap the trout in additional Serrano ham and fry.
