Ingredients for 1 servings:

  • 500 g asparagus, green
  • e.g. olive oil
  • Sea salt, coarse or fleur de sel

Wash the asparagus and drain well. Trim any dry ends and peel any lighter bits. Heat a large stainless steel or cast iron pan (or a plancha) over high heat and add a little olive oil. Fry the asparagus spears in batches for 4-5 minutes over high heat, until they are firm to the bite and the tips are slightly crispy. Keep the cooked asparagus spears warm in the oven at 80°C until all the asparagus is cooked. Sprinkle with coarse sea salt and drizzle with a little olive oil. Serve immediately with white bread and red wine. Serve with a generous portion of air-dried ham, such as Jamón serrano, for a complete meal. Use 250g of asparagus per person as a starter.
