Fried asparagus with pistachios

Ingredients for 5 servings:

  • 500 g asparagus, green
  • 40 g pistachios, unsalted
  • 1 lime(s), organic
  • 2 oranges
  • 3 tbsp oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Wash the asparagus and trim off any woody ends. Chop the pistachios. Wash the lime in hot water, grate the zest from the rind, and squeeze out the juice. Peel the oranges and cut out the segments between the skins. Add 2 tablespoons of oil to a pan and sear the asparagus on all sides. Place on a platter and sprinkle with the lime zest and pistachios. Drizzle with the lime juice. Season with salt and freshly ground pepper. Add 1 tablespoon of oil to the pan and briefly heat the orange segments. Arrange them on top of the asparagus.
