Ingredients for 4 servings:
- 2 large potatoes, peeled and cut into 1 cm thick slices
- 100 g cooked ham, in thin slices
- 100 g cheese (Chaumes), thinly sliced
- Salt
- 1 egg(s), beaten
- Flour
- 250 ml olive oil, for frying
- 2 tbsp olive oil
- 7 cloves garlic, thinly sliced
- 1 bunch parsley, flat-leaf, chopped
- 2 tbsp flour
- 250 ml white wine
Instructions

Spanish tapa (potato slices with garlic and parsley sauce)
Place one slice of ham and one slice of cheese between each of two potato slices, season with salt, dip in the egg, coat in flour, and fry in hot oil until golden brown. Remove from the pan and keep warm. For the sauce, heat the oil in a pan, fry the garlic until soft, and stir in the parsley. Stir in the flour, remove from the heat, and gradually add the wine. Return to the heat and simmer for about 5 minutes, stirring continuously. Pour the sauce over the potatoes and serve immediately.
