Broccoli with anchovies

Ingredients for 4 servings:

  • 1 kg broccoli
  • 2 stalk(s) leeks
  • 1 small onion(s)
  • 6 anchovy fillets (filets de Anchoa)
  • ½ cup wine, white, dry
  • 4 tbsp olive oil (extra)
  • 1 bunch of parsley
  • Salt

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Brecol a la marinara

Peel and chop the onion. Wash the broccoli and halve any large florets. Wash the leek and slice it into strips. Add the oil and onion to the pot. Then add the broccoli, leek, and anchovies. Simmer over low heat for 10 minutes, occasionally basting with a little more wine. Once the wine is used up, add a little more water. Season with salt and parsley, let it simmer for 2 minutes, and then serve. TIP: Served with pasta, this makes a delicious main course.
