Flamenco Eggs

Ingredients for 3 servings:

  • 3 eggs
  • 2 bell peppers
  • 4 tomatoes
  • 1 onion(s)
  • Oil (olive oil)
  • 3 cloves garlic
  • Cumin (cumin)
  • White bread, for dipping
  • Salt
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Andalusian egg recipe

Chop the garlic, bell peppers, onions, and tomatoes; cut the tomatoes into eighths. Meanwhile, heat the olive oil in a (clay) pan. Add the vegetables. Sauté gently while stirring. Simmer on low heat for about 30 minutes. The vegetables should “draw water.” Season with cumin, salt, and pepper. Using two spatulas, separate the vegetables and crack an egg into the empty space. Repeat this with the remaining two eggs. Let it set. If you like, you can also add meatballs to the pan, or instead of seasoning with cumin, add chili peppers and season with chili pepper. You can “thicken” the pan with tomato paste or harissa. Serve with white bread for dipping.
