Ingredients for 4 servings:

  • 3 tbsp olive oil
  • 1 onion(s), sliced ​​into rings
  • 1 garlic clove(s), pressed
  • ½ red pepper(s), cut into strips
  • 1 zucchini, small, grated
  • 1 tbsp parsley, finely chopped
  • 50 g ham, cooked, diced
  • 50 g cherry tomatoes, quartered
  • 75 g ricotta
  • 5 eggs
  • salt and pepper
  • 20 g Parmesan

Heat the oil in a pan (about 24 cm in diameter), then sauté the onion and garlic until translucent. Add the bell pepper, zucchini, and parsley and sauté for about 3 minutes. Add the ham and tomatoes and sauté for another minute. Mix the ricotta with the eggs and season well. Pour the egg mixture over the vegetables and let it set; it takes about 5 minutes. Place a plate on the pan and turn the frittata out onto it. Turn it upside down and return it to the pan and sprinkle with Parmesan cheese. Then fry until the frittata is golden yellow. Serve warm or cold with a green salad.
