Spanish bean stew

Ingredients for 4 servings:

  • 1 cup(s) white beans (soak in water overnight!)
  • 1 large onion(s), diced
  • 2 cloves garlic, more to taste
  • 2 tomatoes
  • 2 tbsp tomato paste
  • bacon
  • 1 ½ liters of water
  • Thyme
  • 500 g mixed vegetables (carrots, leeks, peas, potatoes, peppers, zucchini) chopped
  • 1 sausage (chorizo), spicy Spanish sausage
  • Vegetable broth, instant
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 25 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 25 minutes

Soak the beans overnight in plenty of water. Sauté the onions and garlic, then add the tomato paste, tomatoes, and bacon. Drain the beans and add the water. Season and simmer gently for 1 1/2 hours. Then add the chopped vegetables and sausage slices and simmer for another 20 minutes. Season to taste and sprinkle with fresh parsley.
