Chickpea stew with chorizo

Ingredients for 2 servings:

  • 300 g sausage (chorizo)
  • ½ cup onion(s), finely chopped
  • 2 garlic cloves, finely chopped
  • 2 can/n tomatoes, chopped
  • 2 cans chickpeas, drained
  • 2 tbsp tomato paste
  • 1 tbsp paprika powder, rose hot
  • olive oil
  • Salt
  • pepper
  • possibly cayenne pepper or chili powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sauté the onion and garlic cloves in a little heated olive oil in a pan over medium heat for about 5 minutes. Finely slice the chorizo ​​and add it to the pan with the onions and garlic, and sauté for another 5 minutes. Then add the chopped tomatoes and tomato paste to the chorizo ​​and onion mixture. Cover and simmer for about 5 minutes. Season the mixture to taste and stir in the drained chickpeas. Let the stew simmer gently for about 10 minutes, adjusting the seasoning if necessary. Serve hot. Serve with fresh ciabatta.
