Semolina cake with fruit

Ingredients for 1 servings:

  • 2 cups flour
  • 1 cup(s) semolina
  • 1 cup(s) sugar, maybe a little less
  • 1 ½ cup(s) milk
  • 2 large eggs
  • 1 packet of baking powder
  • 1 packet of vanilla sugar or 1 vanilla pod.
  • 1 pinch of salt
  • 1 shot of rum
  • 300 g fruits, any, possibly cut, pitted

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Mug cake without fat (always use the same mug, approx. 200 ml)

Beat eggs and sugar until frothy, then stir in flour, semolina, and the remaining ingredients. Let the dough rest for 1 hour to allow the semolina to swell. Prepare the fruit of your choice (cherries, apples, raisins, etc.), flour it (with 1 tablespoon of flour so it won’t sink in as much), and fold it in. Preheat the oven to 175°C (conventional) or 150°C (conventional). Pour the batter into a greased springform pan and bake for 45-60 minutes. Please do the toothpick test, as every oven bakes differently.
