Giverea's fish casserole

Ingredients for 5 servings:

  • 600 g fish fillet(s) (e.g. cod, pollock, etc.)
  • 1 stalk(s) leek
  • 1 bell pepper(s)
  • 2 tomatoes
  • 3 tbsp margarine
  • 2 tbsp parsley, chopped
  • 1 clove(s) garlic
  • 1 tsp salt

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Recipe comes from Norway

Preheat oven to 200°C (top/bottom heat). First, add 1 tablespoon of margarine to a baking dish and melt it in the oven. Be careful not to brown the margarine. Slice the tomatoes, chop the leeks, and slice the bell peppers. First, add the tomatoes to the baking dish, followed by the leeks and bell peppers. Place the fish on top. Make a “herb butter” with the remaining margarine, parsley, garlic, salt, and pepper and spread it over the fish. Cover the baking dish with aluminum foil. Bake in the hot oven for about 30 minutes. This dish goes perfectly with rice and salad. You can also add mushrooms to the casserole; just experiment and see what you like!
