Ingredients for 4 servings:

  • 1 kg chicken giblets, or one small chicken
  • 2 large onions
  • 2 garlic cloves
  • 2 bay leaves
  • 2 tbsp olive oil
  • 1 tbsp paprika powder
  • 100 ml white wine
  • Vinegar
  • salt and pepper
  • Chili (Piri-Piri)

Working time approx. 30 minutes; Total time approx. 30 minutes

»Piepmatz« starter made from chicken giblets

Clean the chicken giblets in vinegar and water. Finely chop the onions and garlic and sauté them in a pan with olive oil. Mix the paprika with the wine and deglaze the giblets with it. Season with salt, pepper, and piri-piri sauce, and add the bay leaves. Add a little more water if necessary and simmer for about 30 minutes. Serve with slices of bread and wooden toothpicks or small forks.
