Walnut and Apple Cake

Ingredients for 1 servings:

  • 2 eggs
  • Salt
  • 140 g honey, liquid
  • 80 g butter, melted
  • 1 lemon(s) – zest, grated
  • 1 lemon(s)
  • 50 g corn flour
  • 100 g flour, whole wheat flour
  • 1 tsp baking powder
  • 750 g apples
  • 50 g butter
  • 70 g honey, liquid
  • 3 tbsp whipped cream
  • 3 tbsp rum
  • ½ tsp cinnamon
  • 100 g walnuts, chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For the batter, beat the eggs with a pinch of salt and honey using a hand mixer fitted with a whisk on high speed until frothy. Add the butter, lemon zest and cornflour. Mix the flour with the baking powder, add to the batter and mix in first on medium speed and then on high speed until a smooth batter forms. Pour the batter into a springform pan (Ø 28 cm, base greased). For the topping, peel and quarter the apples, remove the cores, score them lengthwise several times and arrange them in a ring shape on the batter. Melt the butter, add the honey, cream, rum, cinnamon and walnuts. Spread the nut mixture over the apples. Place the pan in the oven and bake at 180°C (preheated) for 50 minutes.
