Fruity, yellow couscous salad

Ingredients for 4 servings:

  • 1 cup couscous
  • 2 cups vegetable broth
  • 1 bell pepper(s), yellow
  • 1 zucchini
  • 2 shallots or small white onions
  • 1 garlic clove(s)
  • ½ mango(s), ripe
  • salt and pepper
  • Vinegar
  • sugar or honey
  • Sesame oil or peanut oil
  • Curry, yellow Thai

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

delicious as a side dish for grilling or just like that

Place the couscous in a slightly larger bowl and pour over the hot vegetable stock. Let it swell for about 10-15 minutes. In the meantime, finely dice the bell pepper, zucchini, garlic, and shallots and sauté briefly in a little oil. Add the vegetables to the couscous and season with curry, salt, pepper, vinegar, oil, and perhaps a little more sugar or honey. Finally, dice the mango and, once the salad has cooled, stir it in. To serve, press the salad into a small bowl and turn it out. Garnish with cress, mint, chili flakes, or whatever you like. Goes great with grilled turkey or just on its own.
