Peruvian spring rolls

Ingredients for 4 servings:

  • 1 pack of spring roll pastry sheets, from an Asian store
  • 1 pack of feta cheese
  • 1 liter of oil for frying
  • 2 avocados
  • ½ lemon(s)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Peruvian Tequeños

Quarter the pasta sheets if necessary. It’s best to work on a floured surface. Fill the pasta sheet with a long piece of cheese. Place the cheese near the edge if possible. Brush the edge of the sheet with cold water. Roll it up until it forms a stick and seal it. Repeat this step until all the cheese is used up. Peel the avocados and remove the pits. Drizzle with lemon juice. Mash the flesh with a fork and season with salt and pepper. Deep-fry the tequeños in plenty of oil until golden brown. Serve with the avocado dip.
