Ingredients for 3 servings:

  • 1 tbsp instant Japanese fish broth (instant dashi)
  • 1 tbsp mirin
  • 2 tbsp soy sauce
  • 500 g udon noodles
  • 1 small pak choi
  • 150 cl water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

To prepare, cut the bok choy into bite-sized pieces. Heat the dashi, mirin, soy sauce, and water. Stir over medium heat until the dashi dissolves. Bring the broth to a boil. Add the noodles and simmer for about 2-3 minutes (follow the noodle preparation instructions). Add the bok choy and stir over medium heat until it collapses. If desired, you can add tofu, shrimp, or 300g of thinly sliced ​​roast pork before the bok choy. 150 kcal per serving.
