Irish mashed potatoes with nettles

Ingredients for 4 servings:

  • 650 g potatoes
  • 1 cup nettles, young, washed and finely chopped
  • 300 ml milk
  • some butter
  • some salt
  • some black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Nettle champ

Simmer the nettles in the milk for 20 minutes. Boil the potatoes in plenty of salted water, peel, and mash them. Stir the cooked nettle and milk mixture into the potato mixture, season with salt and pepper, and serve hot, garnished with knobs of butter.
