Teriyaki sauce

Ingredients for 1 servings:

  • 4 tbsp soy sauce, Japanese, good quality
  • 3 tbsp sake
  • 3 tbsp mirin
  • 1 tbsp sugar, or honey, to taste
  • 1 pinch of salt
  • 1 tbsp lime juice
  • 1 tbsp sesame oil, as desired
  • 1 clove(s) garlic, cut into 1-2 mm thin cubes, as desired

Working time approx. 10 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 12 minutes

Japan’s famous sauce with or without roasted garlic

Bring the soy sauce, sake, mirin, sugar or honey, and salt to a boil to ensure all the ingredients are well blended, then set aside. Heat the sesame oil, if desired, taking care not to evaporate. Then add the finely diced garlic clove and roast without browning. After about 1 minute, add the oil and garlic to the teriyaki sauce, blend, and let cool. Finally, add the lime juice and blend again well. This sauce goes well with many Japanese dishes, especially salmon and chicken, which can be repeatedly “glazed” with it while frying, thus coating them with the teriyaki sauce. This gives the food a shiny appearance.
