Ingredients for 4 servings:

  • 500 g apples, sour
  • 1 tbsp butter
  • 1 tbsp sugar
  • 125 ml water
  • 1 small cinnamon stick(s) or 1 pinch of cinnamon powder
  • 1 star anise or ground anise
  • 2 carnations
  • 1 tsp mustard, hot or 1 tsp hot horseradish

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel, core, and cut the apples into small pieces. Heat the butter and sugar in a saucepan. Allow the sugar to turn slightly yellow. Then briefly sauté the apple pieces, deglaze with the water, and add the spices, except for the mustard or horseradish. Cover and simmer over low heat until the apple pieces have broken down. Only then add the mustard or horseradish and season to taste. This unusual sauce is excellent with roast pork, roast beef, pork chops, and even meatballs.
