Ingredients for 1 servings:
- 1 kg mango(s), peeled and pitted, diced
- 200 ml orange juice, freshly squeezed
- 75 ml lemon juice, freshly squeezed
- 500 g brown cane sugar
- 250 ml malt vinegar (English malt vinegar)
- 20 g tomato(s), dried, coarsely chopped
- 1 clove(s) garlic
- 10 g ginger, fresh, coarsely chopped
- 20 black peppercorns
- 10 cloves
- 6 cardamom pods, lightly crushed
- 4 bay leaves
- 4 allspice berries
- 1 tbsp paprika powder, sweet, smoked
- 1 tbsp salt
- 5 g anise powder
- 3 g cinnamon powder
- 1 tsp chili powder
- 1 pinch(s) nutmeg
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 5 minutes

Combine everything in a pot and cook, stirring, until the mangoes are soft or reach the desired consistency. It will keep in the refrigerator for several weeks, or even decades if canned.
