Italian bread salad

Ingredients for 4 servings:

  • 150 g ciabatta or baguette
  • 1 onion(s), red
  • 1 garlic clove(s)
  • 200 g tomatoes
  • 2 small zucchini
  • 1 bunch of parsley
  • some arugula
  • 2 tbsp wine vinegar
  • salt and pepper
  • 4 tbsp olive oil
  • 100 g sheep’s cheese
  • 1 tbsp capers

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

light and very tasty

Cut the bread into large cubes. It will absorb the dressing nicely later. Peel the onion, quarter it, and slice it into strips. Peel and finely chop the garlic. Trim the tomatoes and zucchini and cut into small cubes. Wash and chop the parsley and arugula, reserving a few leaves for garnishing. Mix the bread with the onions, garlic, herbs, and vegetables. Mix the vinegar with salt and pepper, then whisk in the oil. Mix the dressing with the bread salad, cover, and let stand at room temperature for at least an hour. Crumble the feta cheese before serving. Sprinkle this and the capers over the salad and serve. 255 kcal per serving.
