Asian-style tuna tartar

Ingredients for 6 servings:

  • 250 g tuna, raw sashimi quality or smoked salmon (it’s a matter of taste)
  • 2 spring onions
  • 2 stalks of coriander
  • 1 tbsp sake
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce, Japanese
  • 1 tsp ginger, freshly grated
  • 1 tsp brown sugar

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

Combine all ingredients, except the fish and spring onions, to make a marinade. Finely chop the tuna and spring onions. Mix everything in a bowl and let it sit in the refrigerator for about 1 hour. Serve the mixture on cucumber slices, spoons, crackers, homemade chips…the sky’s the limit.
