Ingredients for 1 servings:
- ½ nori sheet
- 1 surimi stick, long
- ⅛ avocado(s)
- 2 strips of salmon, raw
- some cucumber(s)
- some roe (masago)
- some wasabi

simple, quick and delicious
For the filling, cut the avocado and cucumber into thin strips. Use either one long surimi stick or 2.5 short ones. Cut the raw salmon into strips of as equal thickness as possible. Place half the nori sheet, shiny side down, on a bamboo mat. Spread the entire filling in the center of the sheet. Make sure to stack them as tightly as possible to make rolling easier. Season with a little wasabi and moisten the top edge with water before rolling. Using the bamboo mat, wrap the nori sheet completely around the filling and seal. Using a very sharp knife, cut the roll into 6 equal-sized pieces. Serve with a little soy sauce and pickled ginger (gari). This recipe is ideal as a small and very light appetizer! Preparing sushi is a bit more complicated, mainly due to the rice cooking. Some people don’t particularly like rice, so why not sushi without rice? Sushi translates to “fermented rice.” So, “sushi without rice” isn’t quite the right term, but it still tastes great!
