Ingredients for 4 servings:
- 500 g minced meat, mixed
- 2 onions
- 2 garlic cloves, possibly 3
- 4 tbsp olive oil
- 125 ml white wine, alternatively vegetable stock
- 3 tbsp parsley, chopped
- Thyme
- salt and pepper
- 1 pinch(s) cinnamon powder
- 4 tomatoes
- 2 eggplant(s)
- 50 g butter
- 4 tbsp flour
- ½ liter of milk
- 100 g cheese, grated
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Sauté the onion, garlic, and ground beef in two tablespoons of olive oil. Slice one tomato and dice the others. Add the diced tomatoes, wine or broth, parsley, salt, pepper, thyme, and cinnamon to the beef, simmer for 30 minutes, and season to taste. Slice the eggplant and fry for one minute on each side. Brown the butter and flour in a saucepan, add milk, and make a light sauce. Season. Preheat oven to 200°C (400°F). Grease a baking dish and rub with a clove of garlic, if desired. Alternate layers of eggplant, ground beef, and white sauce in the baking dish. Finish with eggplant and tomato slices, and sprinkle with cheese. Bake for 10 minutes. Delicious with any kind of side dish.
