Rye Bread

The perfect rye bread recipe with a picture and simple step-by-step instructions.

For the dough:

  • 700 g Rye flour type 997
  • 1 packet Dry yeast
  • 2 tsp Salt
  • 500 ml Warm water

For the dough:

  1. Put the flour in a bowl.
  2. Add the dry yeast and mix.
  3. Add salt and warm water and knead well.
  4. Cover the dough and let it rise for several hours.
  5. Knead the dough well again and place in a floured cast iron saucepan.
  6. Sprinkle the dough with flour and score twice with the knife.
  7. Put the pot with the lid in the oven.
  8. Bake at 230 degrees top and bottom heat with lid for 30 minutes.
  9. Remove the lid and bake at 200 degrees top and bottom heat without the lid for another 20 minutes.
