Ingredients for 4 servings:
- 800 g potato(s), waxy
- 1 bunch of spring onions
- 1 bunch of flat-leaf parsley
- 1 lemon(s), juice
- olive oil
- salt and pepper

a typical summer salad, light, goes well with grilled food
Peel the boiled potatoes and slice or dice them. Finely slice the spring onions. Roughly chop the flat-leaf parsley. Place all ingredients in a bowl. Season with salt and pepper and gently mix with the lemon juice and olive oil. Let it sit in the refrigerator for about 1 hour.
