Eton Mess

Ingredients for 2 servings:

  • 2 large meringues
  • 200 g whipped cream
  • 1 packet of vanilla sugar
  • 250 g strawberries (or raspberries or mixed)
  • possibly powdered sugar

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dessert from England’s famous school

Roughly crumble the meringues. Rinse the berries, quickly wash them, and blend half of them, then chop them into small pieces. Whip the whipped cream with the vanilla sugar until stiff peaks form, adding a little more powdered sugar if desired. Be careful, though, as the meringue is already very sweet. Mix the cream with the fruit and fruit puree thoroughly. Layer the meringue, fruit cream, meringue, fruit cream in tall dessert glasses. Serve Eton Mess immediately, or the meringue will become soggy.
