Ingredients for 4 servings:
- 500 g sausage (Italian salsiccia)
- 500 g potatoes
- 2 sprigs rosemary
- Salt
- pepper
- olive oil
- ½ bottle of red wine

Italian sausage with potatoes cooked in the oven
Peel and wash the potatoes, dice them, and place them in a baking dish in the oven with salt, pepper, the plucked rosemary needles, and a generous splash of olive oil. Pre-cook at 180°C for about half an hour. Now brown the salsiccia in a hot pan with olive oil, on both sides, and don’t forget to pierce them with a sharp fork, otherwise the sausages will burst. Once the sausage has a nice brown color, deglaze with the red wine, simmer briefly to loosen the juices, and then add everything to the potatoes. Continue cooking in the oven for about half an hour—until the potatoes are just tender—this will vary depending on the oven. Serve with fresh white bread.
